Keep climbing

I hope this helps everyone else climb their mountain !

I tried to climb the mountain today. As I inched my way up the path, I felt out of breath and had to turn back.
I tried to climb the mountain today. But, It was so hot outside, I thought I had better stay in my nice air-conditioned house and rest up for tomorrow’s attempt.
I tried to climb the mountain today. On my journey, darkness started to fall and I was full of fear, so I had to return to a safe place.
I was ready to climb the mountain today. But I had so may other things to do, so instead of climbing the mountain I took care of the much more important tasks; I washed my car, mowed the grass and watched the big game. Today the mountain will have to wait.
I was going to climb the mountain today. But as I stared at the mountain in all it’s majestic beauty, I knew I had no chance of making it to the top, so I figured why even begin trying.
I had forgotten about climbing the mountain today, until an old friend came by and asked what I was up to lately. I told him about all my plans to climb that mountain someday. I went on and on about how I was going to accomplish the task.
He stopped me and said, “I just got back from climbing that mountain. for the longest time I told myself I was going to try to climb it but never made any progress.”
“I almost let the dream of making it to the top die. I came up with every excuse of why I could not make it up the mountain, but never once did I give myself a reason why I could. One day as I stared at the mountain and pondered, I realized that if I didn’t make an attempt at this dream all my dreams would eventually die.”
” The next morning, I started my climb. It was not easy, and at times I wanted to quit. But no matter what I faced, I placed one foot in front of the other, keeping a steady pace. When the wind tried to blow me over the edge, I kept walking. When the voices inside my head screamed, stop! I focused on my goal, never letting it out of sight. I kept moving forward. I could not quit because I knew I had come too far to stop now. Time and time again, I reassured myself that I was going to finish this journey. I struggled mightily to make it to the top, but I CLIMBED THE MOUNTAIN.”
“I have to be going,” my friend said. “Tomorrow is a new day to accomplish more dreams. By the way what are you going to do tomorrow?”
I looked at him, with intensity and confidence in my eyes, and said, “I HAVE A MOUNTAIN TO CLIMB.”

Bubble and squeak

So yesterday I shared my healthy KFC recipe and today I have another quick favourite of mine … Bubble and squeak cakes !

ingredients

Based on 6 cakes

Potatoes x7
Spring onions x4
Cabbage
Eggs x2 (yolk only)

Peel the potatoes, boil then mash.
Shred the cabbage and mix with the egg yolks into the mash potato.
When the potatoes are cooled add in the chopped spring onions and make them into round cakes,

These are great as you can leave them in the fridge to cook another day or cook right away.
When ready to cook fry on a medium heat in fry light 1 cal spray !

Determination today leads to success tomorrow

Day 2!

Day 2 of blogging, and for the first time in the 5 weeks I’ve been loosing weight I’m feeling unmotivated. Probably because I’ve got horrible flu and all I want is chocolate! However I’m still going to stick to it and keep myself motivated by repeating

nothing tastes as good as being skinny feels

….. So far so good.
As I said in yesterday’s blog I am starting the 30 day squat challenge I did 50 squats yesterday and even with my horrible flu managed to do 55 today. No aches and pains yet but I’m sure after a week or so when I’ve increased to 100 squats I won’t be so optimistic!
I would also like to share one of my favourite quick recipes that tastes like KFC chicken but a much healthier version!
Based on 4 portions
ingredients
4 chicken breasts
Rice Krispies
X2 eggs
Black pepper

Start by crushing about 7-8 handfuls of Rice Krispies.
Dip the chicken breasts into the egg mix then into the Rice Krispies
Next season I choose black pepper but paprika, chilli powder or any other seasoning works just as nice!
After cooking the chicken for 30 to 40 mins till the Rice Krispies are browned serve with jacket potato and salad.

And there you have it healthy KFC chicken !!
First time I heard it I admit I wasn’t sure but it’s now a favourite enjoyed by the whole family !!

The begining-ish

With only 4 months to go until my summer holiday, many people (including myself) thought I was cutting it a bit thin (excuse the pun) to get my “bikini body”. I know most women (and some men) dread the holiday photos and lying on the sand looking like a beached whale. But to late or not I am determined to look and feel better by September ! 4 weeks ago I joined a slimming club and have lost 10lbs so far. Weight loss can be expensive and time consuming so I’m going to use my blog to share recpies, tips and quick exercise routines to help anyone else who like me want their bikini bod!

Today I’ve decided to try the knew craze “30 day squat challenge” so starting off with 50 squats and upping it each day until eventually reaching 250 squats !!

Lets see how this goes …….
